I thought about trying this before but I couldn't find suitable single hooks locally so I kinda forgot about it tbh. I figured that in theory at least that the slightly reduced hook up rate with using single hooks might be made up for in an increased chance of landing any hooked fish due to the wider gaped single hook having a better hook hold but I never got around to trying it out. I can certainly see the advantages in using them especially in terms of catch and release and actually when you think about it, a lot of lure fishing is done with single hooks already, namely soft plastics and SWFF. I must see if I can get some suitable single hooks and try them on a few plugs next year.
