How about a sticky in this section with a list of reputable, tried & tested, foreign travel companies (obviously specialising in fishing), and guides. It would make a good reference point for those of us that havent done the whole tropical thing yet, and frankly, wouldnt know where to start ??

No problem Alex !
USA Cape Cod, Marthas Vineyard, Captain Jamie Boyle, contact him through Coops bait and Tackle
USA Florida, Keys Flats Tim Borski-expensive, hard to book, but easily the best guide for BIG bones and permit on fly/light tackle.
USA Florida, Keys Inshore/offshore Light tackle Captain Bob Trusset- You name it, he will show you how to catch it.
Cuba Jadina de la Reina Flats Cokey contact him through La Tourtuga Fishing, good eyes, great boat control, a cut above other guides in the area.
